After the dough has rested, it will be ready to be shaped and transformed into our authentic Sicilian pasta. Together, we will prepare the pasta in the various traditional Sicilian forms, just as my grandmother taught me.

While the dough rests, we’ll move on to preparing the sauce, using Nonna Rosalia’s recipes and local ingredients to create traditional Sicilian sauces that will perfectly complement our homemade pasta.

We will explain the differences between the flours, a key element in pasta-making. You’ll discover how semolina, classic flours, and ancient Sicilian flours affect the texture and flavor of the pasta. Each type of flour has a unique role in the tradition of Sicilian pasta, contributing to the authentic character of the dish.

We will show you how to prepare the dough by measuring the ingredients and working it to achieve the perfect consistency — the essential base for our Sicilian pasta. Once it's ready, we’ll let it rest for about 30 minutes, and in the meantime, we’ll move on to preparing the sauce.

Upon arrival, you’ll be welcomed with a traditional Sicilian aperitif, accompanied by a tasting of two Sicilian wines. This is the perfect moment to get to know each other and dive into the flavors of Sicilian culinary tradition.

During the class, under my guidance, you’ll learn how to make fresh pasta by hand, exploring Sicilian flours and recipes passed down from my grandmother, Rosalia. After preparing the dough and allowing it to rest for about 30 minutes, we’ll use this time to prepare a traditional Sicilian sauce together. You’ll then shape the pasta into typical Sicilian forms, which will blend perfectly with the freshly made sauce, creating an authentic and flavorful dish. Finally, we’ll enjoy the fruits of your labor, and we’re sure the result will be excellent! To end the experience, we’ll treat you to a homemade Sicilian dessert and a glass of our homemade limoncello.
